Ingredients
4 ripe peaches and/or nectarine, pitted and roughly chopped
3 large eggs
½ cup sugar
Pinch of salt
½ cup flour
1 teaspoon vanilla extract
1 cup milk (whole or 2%)
Powdered sugar
Instructions
Preheat the oven to 350 degrees.
Butter a 9-inch baking dish and spread out the washed and chopped stone fruit in a single layer.
To make the batter, in a medium/large bowl whisk the eggs and sugar together until combined. Whisk in the salt and flour until smooth, then whisk in the milk and vanilla extract.
Pour the batter into the baking dish over the chopped peaches/nectarines.
Bake for about 40 -45 minutes or until cooked through and lightly browned. (When you pull it out of the oven the Clafouti will wiggle a bit, which is normal. Place it on a wire rack to cool.
Eat at room temperature and dust with some powdered sugar right before serving.
